Forest Open Fire Dining is an intimate 3–5 course dinner set inside Maisemakammi – a glass-walled forest pavilion in the heart of Nuuksio National Park, on the shores of a pristine Finnish lake. Open fire is not an atmospheric detail here: it is the primary cooking method and the dramatic core of the experience. Every dish is prepared over live flame in front of guests, creating a rhythm and presence that no conventional kitchen can replicate.
The menu is built around conservation-fished bream and roach – species caught to restore the ecological balance of Nuuksio's lakes – alongside wild game (venison, elk, wild boar), local mushrooms, berries, nettles and spruce shoots. Less popular cuts of game are used in full; surplus ingredients become broths and sides. Nothing goes to waste, and every element has a traceable origin and a story.
Available year-round with four seasonal menus, the experience runs 2.5–3 hours in a fully private setting for groups of 8–24. Haltia Lake Lodge is the only hotel inside Nuuksio National Park, 35 minutes from Helsinki city centre.
